I think I got this recipe from my sister Geri a long time ago. Except for having to grate the carrots it's really simple . . . and it's very, very good. It calls for crushed pineapple. I think that's what makes it so moist.

Oh wow!! So ONO looking. Ok, this one I have to make. I think I've seen carrots already shredded in packages at Bel Air. I will have to look this week. Sure would make life easier except the freshly grated carrots would taste better. I need a dessert for the card swap on April 10th. Thanks for sharing, Jalna.
