Here's Wendell's attempt at recreating Brandee's first place winner of my working place's pasta contest. The recipe's a secret but he tried his best by using smoked bacon, spinach, basil, tomato, shiitake mushrooms and two kinds of cheese - parmesan and fontina. It came really close, but the sauce was kinda runny. When I told Brandee about it she said, "What, too much chicken broth?" Hmmmm . . . chicken broth . . .
Chicken broth is always da secret ingredient in pasta dishes. After you brown your bacon, garlic, to get all those brown bits off the bottom of the pan, put couple of TB of chicken broth (or white wine) WITH the pasta in the pan, the pasta will absorb all the goodness of what the chicken broth takes off the bottom of the pan ;o}
