Landon's Short Rib Roast
Landon made this a few days ago, and for the first time I was able to get a pretty detailed recipe from him. Hooray!
It was very, very good.
Season boneless short rib with Dd's Season All (or your favorite multipurpose seasoning) and thyme. Sear meat in oven-proof pan on stove.
Add and sauté:
1 onion, large dice
1 bell pepper, chopped fine (for flavor)
3 large cloves garlic, minced
1 tomato, diced
1 bay leaf
Add and deglaze:
1 can beef broth and 1/2 cup wine
Top with fried onions (optional)
Put pan in oven and bake at 350 degrees for 1 1/2 hours
Add:
2 potatoes, large cubes
3 bell peppers, large dice
Bake additional 45 minutes.
