Ooooooooh! My favorite dish is from Thelma's in Waipahu - called Thelma's Special. Just like you said - chopped up lechon, with chopped up tomatoes and onions. Only thing they don't use patis, just shoyu.
So wickedly ono because it is "bad" food, but so delicious that it is worth it.

I've never heard of that term Lechon before. Is that another language? But that looks to me like a pork belly strip with the fat left on to crisp! Yummers! But I would never pay that price. You are brave Jalna! You must be my rich Auntie! ; )

Oooh Lorna . . . I just googled "tinono" and saw Yelp reviews for Harley's on Kauai. The most recent reviewer mentions how they closed up and how his family was so happy when he discovered that they had reopened.

Susan, I actually had to google "tinono". Me and my sisters call it Lechon Kawali.
I though when you chop it up and add onions and tomatoes it's called sisig, but what do I know haha. Lechon kawali is the first picture...when it's fried like that. : ) yummy either way because I eat fried pork with onions and tomatoes
