Pork with Miso


Wendell made this last night.  It was veeeery tasty, kinda on the sweet side.  He ended up with a lot of sauce. . . you probably could use half the ingredients for the amount of pork required and still be okay.


1 1/2 pounds pork
4 cups water
2 cups miso
1 1/4 cups sugar
2 tbs. ginger juice
2 tbs. sake or whiskey

Place pork in boiling water.  Lower heat and simmer for 30 minutes.  Cool and slice into 1 x 1 inch pieces.  In a skillet, fry pork on medium heat for 10 minutes.

Combine water, miso, sugar, ginger juice and sake; stir into pork.  Lower heat and cook for 20 more minutes, sirring occasionally.

(I asked Wendell how you get ginger juice. He said you're supposed to squeeze the ginger in a cheesecloth to extract the liquid.  He didn't want to do that so he said he just mashed some ginger and let it soak in some water. He used that water instead).

mmm I usually get ginger juice by cooking the ginger with the sauce then squeezing it with the tongs.
