Lemon Cupcakes with Chocolate Chips


I still had a little bit of lemon juice left from the Meyer lemons that Marvin gave me so I decided to make these cupcakes, the original version of which blogger pal Kat posted on her blog Adventures in Japan. Kat was kind enough to include a link for me to use to convert the measurements.

First you sift together 1 1/2 c. flour and 1 1/2 tsp. baking powder. I couldn't find my sifter so I had to use this collander (funny yeah).
In a separate bowl beat 1 medium egg and 1/2 c. sugar for 2 minutes (2 minutes? I just beat the hell out of it for about 30 seconds). Look how nice my Keeaumoku Produce egg is.
Add 1 1/2 tablespoons of milk and 4 tablespoons of melted butter. Beat for 10 - 15 seconds.
Add 3 1/2 tablespoons lemon juice and some lemon zest.
Add wet ingredients to dry ingredients. . .
with 1/3 c. chocolate chips. Kat's recipe also calls for cacao nibs, but I never got around to buying 'um.
Spoon into muffin tin. Makes 6. The dough was kinda thick. Not sure if it's because I had to round off the measurements so they weren't really exact.
Bake at 350 degrees for 25 minutes. As usual I small-kine forgot about the muffins so they got a little over baked, but it didn't matter 'cause . . .

Hahahaha, Les your lemon cupcakes were better. Mine came out more like biscuits in texture.

OK, so now with all your baking you really need to get a Kitchen Aid Mixer!!! They look ono delicious.

I know I probably need a mixer, but my wooden spoon is waaaay cheaper.
