Colin's Bran Muffin
My mom's breakfast routine includes having a bran muffin every morning. She was so sad with the closure of St. Germain Bakery because that's where her favorite muffin is from.
A few days ago my nephew Colin surprised my mom with bran muffins that he and my brother had baked.
So so so so sweeeeeeet, yah!!!! And the muffin is perfect for my mom . . . moist and not overly sweet.
I LOVE YOU, COLIN!!
Mix wet ingredients:
4 tablespoon vegetable oil
1 cup chilled applesauce
2 eggs
1 cup well-drained crushed pineapple
Add dry ingredients:
1/2 cup dark brown sugar
1 1/2 cups oat bran
1 1/2 cups flour
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon salt
1 cup raisins
1 cup walnuts
Bake at 400 degrees for 15 minutes. Makes 12 muffins.
