Wendell made this super ono pork cutlet for dinner the other night. He just coated the thinly sliced pork with egg, flour, panko, salt and pepper, and then fried.
I bought the pork from Palama Market. I wasn't really sure if the "collar" would work, but it turned out to be perfect.

J, what did Wendall use for the gravy. It looks so pretty and delicious. Was the collar soft. Also love Cleta's cleaner. Gotta hit up Daiso for that. -N

N, Wendell's go-to gravy is just the McCormick brown gravy mix . . . fast and simple. The collar was soooo perfect . . . very soft and no tugging when biting into it.

Susan, I liked it so much that I bought more thin-sliced pork at Times the other day. It was on sale for $4.99/pound. Hope it works out as good as the collar did.
