Dd's Baked Greek Chicken


This looks so good.  Maybe someday I'll try to make it.  Minus the feta cheese.

GREEK BAKED CHICKEN   
 
4 pieces boneless, skinless chicken breast tenders
1/4 tsp. dried oregano
Garlic salt and pepper to taste
1½ TB olive oil
½ bunch spinach leaves
¼ medium red onion, thinly sliced
5 oz. artichoke hearts, quartered
1 TB sun dried tomatoes, sliced
1 TB kalamata olives, sliced
½ c. mozzarella cheese, shredded
3 TB feta cheese, crumbled
 
Preheat oven to 325 degrees. Generously season chicken with oregano, salt and pepper. 
Set aside. 

In a small mixing bowl combine mozzarella and feta cheeses. Set aside. 

In a mixing bowl drizzle spinach, onion and artichoke hearts with olive oil, garlic salt 
and pepper. Place half of spinach mixture on bottom of baking dish. Top with prepared 
chicken.  Toss remaining spinach mixture with sun-dried tomatoes and olives. Top chicken 
with mixture. Sprinkle with cheese mixture. 

Bake 25-30 minutes until cheese is melted and chicken is cooked through. Optional to place under broiler for 1-2 minutes to slightly brown cheese. 

Serves 2.

This looks great! Are the artichokes fresh or canned ? I would have to google how to prep the artichoke. And no feta for me either.

Aunty, I'm not a feta fan. It's too stinky.
