Wendell found this recipe at I Love Hawaiian Food Recipes here. It was juicy and very flavorful.
Ingredients
- 3 pounds of chicken (thighs & drums)
- Marinade
- ½ cup soy sauce
- ½ cup brown sugar
- ¼ cup ketchup
- ¼ teaspoon dry mustard
- ½ teaspoon Worcestershire sauce
- 1 inch piece ginger, grated
- ½ teaspoon Hawaiian salt
- 1 tablespoon vinegar
Instructions
- Place chicken in bowl, combine marinade ingredients in a separate bowl and mix well. Pour over chicken and refrigerate overnight.
- Line shallow baking pan with foil and lightly grease. Place chicken on pan and discard marinade. Bake at 325 degrees for about 45 minutes or until chicken is cooked through.

Looks and sounds awesome! For years I have mainly bought drums or breasts. But finally the past couple of years I have tried thighs and now I realize I like them the best. They seem to have a much better and bold flavor. We have a store here called Smart and Final. Last week they had chicken on sale for only $0.69 cents per pound! I finally had to get a rain check because every time I went in they were out of the sale chicken. The on sale food prices here (san diego) are amazing!
Hmmmm.... This sounds very interesting. I've never added Worcestershire sauce, mustard or ketchup in teriyaki sauce. Very intriguing.
I must thank you again for the fruitcake recipe. I made another batch to bring to California for omiyage. Art and Mom really like it! I'm sure glad I have a stand mixer though. After all these years of Art trying to find a fruitcake he likes, at last... at last!!! You have no idea! He's bought fruitcake in Italy, Portugal... all over. Thank you, thank you.
