Wendell's Beer-Battered Fish


I liked this fish dish that Wendell made. He served it with some tartar sauce. The recipe is from here

INGREDIENTS 

    • 2 quarts vegetable oil ( for frying)
    • 8 (4 ounce) cod fish fillets
    • salt and pepper
    • 1 cup all-purpose flour
    • 2 tablespoons garlic powder
    • 2 tablespoons paprika
    • 2 teaspoons salt
    • 2 teaspoons ground black pepper
    • 1 egg, beaten
    • 1 (12 ounce) bottles beer

DIRECTIONS

  1. Heat oil in a deep fryer to 365 degrees F (185 degrees C).
  2. Rinse fish, pat dry, and season with salt and pepper.
  3. Combine flour, garlic powder, paprika, 2 teaspoons salt, and 2 teaspoons pepper. Stir egg into dry ingredients.
  4. Gradually mix in one beer until a thin batter is formed.
  5. You should be able to see the fish through the batter after it has been dipped.
  6. Dip fish fillets into the batter, then drop one at a time into hot oil.
  7. Fry fish, turning once, until both sides are golden brown.
  8. Drain on paper towels, and serve warm.

Good looking and the batter sounds like it can be used for chicken too! Yum.

Holy cow, Anon, you're right. I asked Wendell if he remembers using that much salt and pepper, and he said that he probably did!

I love this recipe. And I have always wanted to do this. But I live alone and I am always cooking for one! Me! I just can't justify pouring 2 quarts vegetable oil (for frying) for a one meal deal. Can the oil be saved for more cooking later.

Landon has reused oil, but only just one more time, and it was pretty much soon after.
