Chicken Kelaguen
Coworker Kris is from Guam and she makes this popular Guamanian dish a lot. I really like it so I decided to try and make it myself. It's good with tortilla chips.
The recipe I found calls for 3 red chili peppers, but I used this chili garlic sauce instead. I bought the $5 ono chicken from Costco, took all the meat off the bones and cut it up really fine. I added about 6 stalks of chopped green onions, salt, the chili sauce and lemon juice. And that's it!! The recipe calls for the juice from 3 to 5 lemons, but I just bought one 'cause it was 2 bucks for just ONE, and I wasn't about to spend 10 bucks on lemons when the WHOLE chicken cost me only $5. So I used the juice from the one lemon and about 1/2 cup of the lemon juice that I bought from Costco earlier.

What do you eat it with? Very easy to make. I couldn't eat it because of the chili peppers but it does look good.
Kat, I like it 'cause it's so flavorful without any fattening ingredients.
Betty, Kris likes to eat it with tortilla chips, but I've read that you can eat it with pita or naan bread.

Hey, Didi, I just saw a recipe for finidini! It calls for shoyu, lemon juice, finely chopped onion and peppers. You let it sit in the fridge for a few days before marinating the chicken in it. I'll ask Kris if she has her own recipe.

I have a recipe I made up in Book II, I made it with habanero and lemon. But I had a batch from a Guamanian friend of mine long long time ago and could not put my finger on the citrus ?? kalamansi ?? or myb combination of lemons, limes and kumquats ?? I like licked the bottle ;o}

It WAS easy, mmiissee . . . something different, yeah.
This is my favorite Guamian dish. I was there for 2 months and we tried every restaurant on the island. I still yearn for this, especially when they use fresh coconut.

Erick, the recipe did call for coconut, but I didn't think I wanted it. Maybe next time I'll include the coconut. You were there for 2 months!!
