Dd's Fritos Crusted Pork Chops

FRITOS CRUSTED PORK CHOPS


½ tsp onion powder
½ tsp garlic powder
1/8 tsp salt
1/4 tsp freshly ground black pepper
2 pork chops
1/4 c flour
1/4 c buttermilk
1 egg
2 TB Italian parsley, chopped

2 c Fritos, finely crushed-makes about 1 c

Preheat the oven to 375 degrees. In a small bowl combine onion powder, garlic powder, salt and pepper.  Liberally season pork 
chops with mixture. *Place any leftover salt mixture into dish with Fritos. 


Into 3 shallow dishes separately place (1) flour, (2) whisked egg/buttermilk and (3) crushed Fritos, parsley *and any leftover salt mixture. 


Dip pork chops into flour, then buttermilk mixture and then dredge into Fritos pressing to coat completely.  Place onto greased baking sheet. Top with any leftover Fritos. 


Bake 25-30 minutes. Serves 2.

Shirakiku Frozen Mixed Vegetables

Wendell bought this from Chef Zone.  I was so surprised . . . it tasted good. And it was only $4.84.

Wendell added pork and shiitake mushrooms plus the ingredients below.  I think it actually didn't have carrots, but it could be that I just didn't take any for my bowl . . . not a fan of cooked carrots.  It definitely didn't have any of the peas that are in the picture. But still, I think it was worth the price.

Wendell's sauce:
2 cups water plus 1 pack of dashi powder
3 tbs. sugar
2 tbs. mirin
1/2 tsp. salt 
1/3 cup shoyu

Dd's Chicken Anchovy Olio

CHICKEN ANCHOVY OLIO

 

12 oz. chicken breast, cut into 1-inch cubes
garlic salt, freshly cracked black pepper

½ c flour, as needed

2 TB olive oil
½ (2 oz.) can anchovies

2 TB garlic, chopped

2 TB capers, drained

½ c. white wine
salt and freshly cracked black pepper, to taste

6 oz pasta, cooked according to package directions

garnish: chopped Italian parsley, grated parmesan cheese

Generously season chicken pieces with garlic salt and pepper. Dredge in flour. Brown chicken in oil in a skillet over medium heat.  Drain on paper towels; set aside. 


Into skillet, dissolve anchovies in remaining oil. Add garlic, capers and white wine stirring until reduced completely. Return chicken to skillet; heat through. 


Serve over pasta. Garnish with parsley and cheese. Serves 2.

Nihonga Painting

I guess you can call this a Nihonga painting because except for the gum arabic, I kinda used "traditional" methods. 

I used rice paper that I found at the swap meet awhile back.

Included in the same box was this white paint.

There was also a bunch of bamboo brushes, a ceramic palette and a lot of dishes of Kissho Gansai paint. There was actually so much stuff that I gave half to my former coworker, CQ.  It was a good score that Sweetie pointed out to me.  I would have totally missed it.

Mushroom

This mushroom and more like it popped up one morning in our front yard after the big rains.  So cute yah. Unfortunately, it didn't last too long . . . Wendell kicked them all up soon after I took this picture.  Bah.

I used this very dark and bold 12B pencil for the first time even though I've had it for awhile. Turns out I like it a lot.

Bright Idea

A few days ago I remembered that I have these watercolor powders that I paid a pretty penny for ($25) and hardly ever use. 

So I decided to try and make paint with one of them.

I chose fuchsia.

Look what happened with I added a few drops of the gum arabic to the powder.  Whoa!IMG_6002

I used a toothpick to blend instead of my finger.  I didn't wanna end up with a fuchsia finger.IMG_6004 2

Here it is after I added water.  I didn't like it.  Not quite sure why.  It didn't make me feel soothed and peaceful like how I feel when I use the Japanese powder.  I couldn't wait to sop it up with a paper towel and clean off the dish.

Caught by Surprise

I was cleaning out stuff on my computer yesterday when I clicked on this file.  I wasn't expecting to see Kona.  Made me so sad.
