I made this fried saimin using Hamura Saimin noodles that my friend The-Other-Leslie brought back from Kauai.
I boiled the saimin, ran it under water and set it aside.
I stir fried some eggs, lup cheong, string beans, green onion, and celery in a bit of oil, oyster sauce, shoyu and couple packs of powdered dashi. I also added about two spoonfuls of rayu chili oil.
Then I threw in the saimin noodles. It was not bad considering that I (the non-cook) made it.

OOOOOOHHHH! I love fried saimin. Yum yum yum. Maybe I have to go to Zippy's now. Theirs is no way close to as ono as yours, but it is not bad.
that's what I like a about saimen/ramen, you can add what YOU want,comfort food. And yes, it was Nijiya Mart, thanks I forgot the name.

N, the saimin is good, but it's the noodles that are special. I think they're made old school way. When you boil it, the water gets really thick and starchy. I had to rinse the noodles really well.
