When Didi gave me a bottle of her ume dressing, she warned me that it might be a bit sour. It wasn't at all. It was perfect . . . not too sour nor too vinegary (I don't like vinegary).
Here's her recipe. Isn't she the greatest for sharing!! Love you Didi!!! Mwa, mwa, mwa!
2 TB ume pulp, from 6 large umeboshi*, mashed well ¼ c. rice vinegar 2 TB mirin 2 TB water* 4 tsp sugar 1 tsp. ground ginger 1 tsp. garlic powder ¼ tsp. freshly ground black pepper 1/4 tsp. salt 2/3 c. salad oil
* After removing pulp from umeboshi, place seeds in water and rub any remaining pulp off seeds. Place all ingredients in a dressing bottle and shake shake shake. Optional to place all ingredients in a food processor and puree. Makes approximately 1 cup.
Had to share my attempt at trying to get a good shot of the bottle indoors. Neva work.

I thought about maybe having you post the recipe of the AHI BOMBE I made for Super Bowl and then I realized that I am not that nice. Just need to hold on to that recipe a little bit longer. LOL! HEE HEE!! But any dessert recipe YES1

Shun Wah, I think salads are my favorite lunchtime food. Hard to explain what an ume is. It's Japanese . . . maybe preserved plum?
