Nate's Pork Watercress Soup
It had been awhile since we'd had pork and watercress soup, but this was so ono that Wendell made it twice in as many weeks. Wendell had gotten the recipe online and when I saw the page he printed out, I noticed the familiar face of a little girl with a spoon in her mouth. He had gotten it from Nate's blog Hwn Pake in Okinawa! Wendell doesn't even read my blog so he has no idea that it's one of my favorites.
Nate made his soup in a crockpot, but Wendell made his on the stove. He covered about 2 pounds of pork with water in a pot. He added about a 2-inch piece of ginger, sliced and smashed, and some salt and pepper. He boiled it for about 1/2 hour and then added a bunch of cut watercress and some shiitake mushrooms. He simmered it for another 1/2 hour.

Thanks for the recipe Nate. I love the soup. I hope he makes it often. Actually, it's easy enough that maybe even I can make it.
Betty, I remember once when someone I was talking to didn't know what watercress was and I was so surprised.
