I followed Ian Fujimoto's YouTube video to make this. The taste was super ono, BUT I shoulda let the salt miko for longer before rinsing because the dressing got watered down after awhile. Maybe it's not meant to be left in the 'fridge for a few days.

Ingredients:
- Persian Cucumbers (8-10)
- Salt (a lot)
- Soy Sauce (6tbsp)
- Sesame Oil (2 tbsp)
- Mirin (3 tbsp)
- Sugar (1 tbsp)
- Chili Garlic Sauce (2 tbsp)
- Rice Vinegar (2 tbsp)
- Garlic (2 cloves)
- Sesame Seeds (as much as you like)
- Persian Cucumbers (8-10)

Ohhhh!!! That looks onolicious! Makes my mouth water. Have you tried the cucumbers from Kamuela? It’s sold in a pack of three at Don Q. , Times and certain Safeways. They’re smaller Japanese cucumbers but I think it’s because it has less water content so it tastes good plain. My friend uses it to make Japanese tsukemono and she said it tastes better than regular size Japanese cucumbers.

Initially, I thought it was cucumber 🥒 kimchee. Cucumber is such a versatile vegetable. It's so refreshing during the hot summer.

i bought cukes from costco yesterday to try make this. i think very similar to those smashed cukes that were popular couple years ago.

I went to Times and looked for the Kamuela cukes that Izsmom talked about. Struck out, unfortunately.
