Awhile back Wendell's friend gave him a bunch of bananas. They were very firm and a bit tart. I wasn't really sure what to do with them so I made banana lumpia. They actually came out good, but to spare myself the calories, I gave most away.
I sorta followed the recipe from the TastingTable site. Cut bananas into quarters. Roll in brown sugar and wrap in lumpia wrapper. Fry in oil.

I love banana lumpia! Usually I have the longer version - the banana is cut in half lengthwise - so they are long and skinny. SO good with pancit!
Those bananas look like the kind my boss gave us. it turns sweet when the skin gets a lot of brown spots. maybe ice cream banana? but yah, either way makes good lumpia!!

J, never had this until a few years ago and loved it. Problem was that I had to make a batch and it was only me so I wasted a lot. It is so tasty I love that stuff. And it is really easy to make I just found the recipe on the web and used it. I think this makes a great potluck dessert. It's easy simple and fast.-N

On the North Shore near Kahuku are food vendors that sell banana lumpia. It's almost like candy because the wrapping is partially caramelized, so ono.

Looks 'ono! When it gets ripe, cut, mash freeze it. It's called Banana Dream bc no more cream.
