I love when Landon makes potatoes this way. It's my favorite. He said that all you do is wedge the potatoes and coat them with a mixture of mayonnaise and grated Parmesan cheese. He just puts everything in a big bowl and mixes them all up. Then he bakes the wedges for 40 minutes at 400 degrees. He said that they'll probably be done sooner if your wedges are small. How easy yah!

The same mixture is really good on top of canned artichoke. I like to add a dash of lemon and cayenne pepper too. Just quarter the canned artichoke heart, put on a cracker, top with a blob of mayo/parm mixture and bake. Yum.
