N, Landon said that the meat for a fish this size is normally tough, so he's asked my brother-in-law to smoke it.
Ulua meat is tough and kinda dry, but tasty. It does make good sashimi when fresh. If you fry it, put it in mayonnaise first and you can season/panko/whatever. VERY ono that way, and moist.
