My Cucumber Dish


After eating (and loving) the $$$ cucumber dish at Wagaya, I was craving more, so I made my version of it.

I salted some cucumber and left it in the fridge overnight. I think a few hours is good enough, actually. Then the cucumber will be crunchier. 

I rinsed off the salt, cut into pieces and added Pietro dressing and furikake. Totally my kind of recipe, yah! I wish I had Korean nori. Then I woulda torn some and added that in too.

It was pretty good except I kinda overdid the furikake part and had to add in more cucumber.

That looks delicious. So when you salt the cucumber, you salt it whole? I want to try your recipe.

Izsmom, I cut the cucumber in half only so that it'll fit in a gallon-size ziplock. I put the cucumbers in the ziplock, sprinkle the salt on, seal the bag and kinda roll, roll, roll the cucumbers on the counter before putting in the fridge for a few hours. After I rinse off the salt (well), I cut into pieces only what I plan to eat and leave the rest uncut in a container. I could be totally wrong, but I feel like it'll stay crunchier that way. Have you ever had the cutie cucumbers from the Big Island? Or were they called keiki cucumbers. Hmmm. Anyways, those are SO good, and I really didn't like cucumbers before! No bitterness and crunchy crunchy! We cut half of one up and give it to our doggie who loves to crunch and eat it.

I think I will try your recipe with these!
