Glazed Pork with Squash
Sorry for being negligent in the recipe department of this blog. Here's a dish that Wendell made a couple of weeks ago. It was really ono. He got the recipe from the cookbook The Legacy of the Japanese in Hawaii: Cuisine.
2 to 3 pounds squash
1/4 pound pork, thinly sliced
Seasonings:
2 1/2 c. dashi
3 tbs. mirin
1 tbs. sugar
2 tsp. salt
1 tsp. shoyu
1 tbs. cornstarch
1 tbs. water
Garnish: Grated ginger
Cut squash into 2-inch pieces. Parboil 3 to 4 minutes; rinse and drain.
Combine seasonings, bring to a boil, add squash.
Add pork, cover, cook over low heat for 20 minutes. Turn heat off, let stand so squash absorbs sauce. Thicken with cornstarch/water mixture. Garnish with ginger.
