Wendell's Rafute (Simmered Pork Belly)
I know Erick's been waiting for Wendell to make this dish since he saw it on NHK Kitchen. Here it is Erick! It was very ono, but ho da humbug to make. You cook the pork, you take it out, you put it back in the pot, you take it out, do stuff to it, put it back. I swear Wendell did that about 4 times. He started the night before and finished off the next day. The recipe can be found here.
No. 1 of the instructions was confusing to me. It says "Put the pork into a pan, cook for about 10 minutes after the water boils." I told Wendell, "What water? So do they mean 'boil' the pork?" He said, "Yup, that's what I did. It's kinda clear that that's what they mean." Ahem . . . maybe clear to some people, but not to me. He also said that he ended up adding mirin and some sugar. He said that he wasn't sure if it was supposed to taste like that, but it was a bit bland to him.

It calls for 5 cups of sake Michele! Now that's a lot of alcohol!
If it's a little bland for Wendell, he could add some dashi powder. That might help.

Wow, 5 cups, my recipe only calls for 1 cup and I thought that was plenty. But I like the taste of the sake in Rafute. :)

Yes, I've been waiting for this. Looks so ONO! Thank Wendell for making it, he is the MAN! That is a lot of work. I can see how watching Wendell work so hard made you so tired. LOL

Do you have a pressure cooker? My mom does pork belly in the pressure cooker. Amazing.
This looks so good. But why the heck didn't they say boil it with water? I don't think that's obvious, either.

Looks good...I don't think I've ever had this before.
We do have a pressure cooker Mariko, but we've never used it. I'll mention your suggestion to Wendell.
