I tried really, really hard to make sure that I got these directions correctly. I hope I got it right for those of you who will attempt this 'cause it was really good.
First, you soak about half of bag of this "shreded" stick overnight in warm water.
Then you soak about one-fourth of this bag of tapioca in warm water for about 2 hours.
Peel about 8 medium okinawan sweet potatoes and cut into cubes. Put the "shreded" stick and potatoes into a pot of water and boil. When the potatoes are almost done throw in the tapioca and continue cooking until the tapioca becomes clear (about 5 minutes). Without draining the water , add about 1 tsp. salt, 1 cup of sugar and 3 cans of coconut milk. Refrigerate. Makes about 20 servings.

mmm...looks good.. so what happens to the shreded sticks after they're cooked? Do they become tranparent like the tapioca? what is that in that stick? a vegetable? mineral? hmmm...

Shun Wah, the stick becomes transparent and kinda gel-like. . . not sure what it's made of.

Pretty easy. Don't know about finding the Okinawan sweet potatoes, though. Maybe Oto's Market will have them.
