Didi's Big Batch Prune-Apricot Mui

BIG BATCH PRUNE-APRICOT MUI

6 packages (12 oz.) pitted prunes
4 packages (6 oz.) dried apricots
1 package (8 oz.) wet li-hing-mui seeds
1 package (4 oz.) dried lemon strips
1 1/2 c. Real lemon juice
1 box (16 oz.) brown sugar
3 TB Hawaiian salt
2 TB Chinese five spice
3 TB Jack Daniels whiskey
1/4 c. li-hing-mui powder

In a large mixing bowl, combine all ingredients, mixing well. Let stand 2 days at room temperature. Makes 1 gallon.

Ps-I added one bag "Li Hing Fuji Apple" from Wallmart .... soosoo ono

Oh my goodness...my mouth is watering as I read this post. So ono!! There are some things I miss so much about home and one of them is goodkine seeds!!

Jack Daniels only because it is so available..........my first choice..Makers Mark ! But you can use any kind of bourbon or scotch..

Annette, here's Didi's response: To me…its kinda a key element….aside from another kind of alcohol, vinegar would be the only recommendation….cider or balsamic…but ½ the amount.

Do you have to refrigerate or can you let it sit out? How long can it sit out for? I'm sure I'd eat it all in one week anyway. Lol! But I remember Crack Seed store lets everything sit out in those huge glass jars.
