CQ's Chicken Papaya Soup


CQ made this oh so ono Chicken Papaya dish. Unfortunately, they got one less papaya tree now 'cause her boyfriend "broke" the tree while trying to pick the papayas for her. The following recipe is in CQ's own words.

3 med-lrg green papayas
3-4 cans chicken stock
1 large onion
3 celery stalks
2 tomatoes
oregano
parsley
ginger (if using fresh ginger slice and put in tea bag. Need to take it out later)
basil
pepper
garlic salt

PEEL, de-seed and chop green papayas to bite-sized cubes. (Must be green and not yellowish orange. If u want a little sweeter soup, you can substitute 1 SLIGHTLY orange papaya.) Chop onion, celery, tomatoes.

BOIL chicken soup stock and add veggies. When onion looks slightly translucent, add the papaya. Let boil for maybe 30-45 minutes on high temperature.

ADD all spices according to taste. Sorry . . . I no measure. I just add um in . . .

LASTLY I add the chicken. I usually let um cook for another 20-30 minutes or so on MED heat, but the papaya should look like squash by now. Taste it, and if its still firm, then boil a little longer. Soup will thicken a little when u let it stand.

I like the boneless chicken thighs cuz the meat just comes out better without the fuss of messin around with da bones. But if you use chicken wings, you will need to cook it a little longer. The meat should be ready to almost fall off the bones. It's da bessest when u have a cold. Even mo betta den mommas chicken soup!
