Kuhn Rikon Peeler

My favorite peeler is made by Kuhn Rikon. It's Swiss made . . . I think I'm seeing a trend here. The blade is made of carbon steel. Carbon steel holds its sharp edge better than stainless steel, but it generally requires special care (which I don't do, BTW).  You can find out more about carbon steel here at Serious Eats.

This three-pack of peelers was on Lightening Deal on Amazon so I got it. Since, I don't really need three, I want to give one of the peelers away. Let me know if you're interested.

Wendell's Garlic Mayo Shrimp

Wendell saw the recipe for this supah ono shrimp dish on Facebook.  It was on one of those instructional videos.




I looked for the video on YouTube so that I could share it with you (below), but small problem . . . it's in another language. I couldn't find the English version.

But, according to Wendell's chicken-scratch notes, here's what you do:

Marinate shrimp in rice wine, pepper and salt. Wendell said he used about 1 3/4 pounds of shrimp. He wasn't sure for how long you're supposed to marinate. He just did it for a few minutes. That's all the time he had.

Fry shrimp in little bit of oil and add the following mixture:

8 tbs. mayo
3 tbs. garlic
1 to 2 hot peppers, sliced
1 1/2 tbs. sugar



Hopefully, Wendell's notes along with the video will be adequate instruction for you. I hope you get to make it because it was really good!

Wendell's Kochujang Lettuce Wrap "Sausage"

Wendell found this recipe in this week's Crave section of the Star-Advertiser. It can be found here. Instead of making patties, he just stir fried the whole thing so that it could be eaten in a lettuce wrap. Good idea yah! 

The flavor was very potent, so you don't need to add any additional sauce, although Landon did along with some eggs.

Korean Kochujang Sausage

• 2 pounds ground pork
• 1/2 cup kochujang sauce
• 6 tablespoons garlic powder
• 1 ounce honey
• 1/4 cup soy sauce
• 1 large egg
• 1/4 cup fruit jam
• Won bok kim chee, chopped (optional)

Combine ingredients and mix until sticky. Shape into 4-inch patties about 3/4-inch thick. Heat oil in pan and fry patties. 

Wendell's Pinatisang Manok

I don't know how Wendell heard about this recipe, but it was good.  He found it here. He used watercress instead of spinach.

Ingredients

• 2.4 lbs chicken pieces
• Salt and pepper
• 2 tbsp vegetable oil
• 2 cloves garlic, chopped
• 1 small onion, chopped
• 1 thumb-sized ginger, peeled and julienned
• 5 tbsp fish sauce
• 2 cups water
• 4 cups baby spinach or pepper leaves
• 2 serrano peppers

Instructions

1. Prepare the chicken pieces by removing the skin, rinsing under cold water and patting dry with paper towels. Season chicken pieces with salt and pepper. Set aside.
2. Heat oil in a pan over medium high heat. Add garlic, onion and ginger and sauté for 2 minutes, or until onion has softened.
3. Add chicken pieces and sauté for 4 minutes or until browned and no longer pink.
4. Add fish sauce and stir to combine flavor. Add water, bring mixture to a boil, lower heat to medium, cover with a lid and let simmer for 20 minutes.
5. Remove lid and continue to simmer for another 10 minutes or until chicken meat is tender. Stir in spinach or pepper leaves. Cover and remove from heat.
6. Serve with steamed rice.

Amazon is Da Bomb

A chair that I had ordered for Landon from Amazon came yesterday. Landon came home from work at around 4:00 pm and when he checked it out saw that the chair had a defective joint piece on one side. 

We boxed up the chair, and I went online and did a Return Request on the Amazon site. Amazon provided me with a free shipping label. We dropped off the box at a nearby UPS branch at 6:20 pm.

At 7:24 pm I received a Refund Confirmation email. Very easy, very efficient, and very amazing.

Vera Bradley

I have a hard time passing up on Vera Bradley bags, especially when they look brand new and are going for only $1.  I don't think I'll be using the items below so I'd like to have a drawing to give them away to one person.

The bag in the back is a cooler lunch bag like the one here. 

Lower left is a mini (6.5 x 4") crossbody/wristlet bag, something like the one here.
