Banana Bread


Wendell's favorite Banana Bread Lady ran out of banana bread last week. I had some bananas in the freezer so I thought that it was a good time to use them. I used the recipe from here because I had all of the ingredients on hand, and although I was about 1/2 cup shy of bananas it still came out okay.

  • 2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • ½ teaspoon salt
  • 1½ cups sugar
  • 3 eggs
  • 2 teaspoons vanilla
  • 1 cup cooking oil
  • 2 cups ripe bananas, mashed
  • ½ cup macadamia nuts, chopped
  1. In a large bowl, sift flour, baking soda, cinnamon and salt.
  2. Make an impression in center of flour mixture and add sugar, eggs, vanilla and oil. Beat until blended. Then fold in bananas and nuts.
  3. Divide batter equally and pour in 2 loaf pans.
  4. Preheat oven 300 degrees and bake for 1 hour, or until toothpick comes out clean.

Our mother made the BEST banana bread ever. She didn't add nuts, because we didn't like them, and she made them in those small loaf pans so that there would be MORE ends! After they came out of the oven, a crunchy, hot end was so wonderful. Unfortunately, her elder daughter did not acquire the baking skills that she had!

There's a lady at the City who sells Banana and Mango Breads, Butter Mochi, Bread Pudding etc.

j: big arigato for the recipe. Made it tonight! As usual I made modifications, added equivalent of butter instead of oil, extra cinnamon and vanilla, less sugar and humongous servings of mac nuts cuz Longs has them on sale. I am nuts about nuts! then I sprinkled powder sugar on top and topped it off with whip cream, it was totally excellent. Mom loved it too. Was simple enough that I had almost all the ingredients. Again a big thanks, you always inspire me!!! =N

awwww man!! Too bad you never tell the best part of the story...I'm apologizing to all your readers for this teaser cause they'll never hear the whole story! :) The bread was yummy by the way, no can tell you were short on bananas...

I love banana bread, but haven't made any in such a long time. Hmmm... now I'm thinking maybe I should make some zucchini bread since there are sales lately.
