Best Thing on a Ritz Cracker Challenge
I never win any of the cooking contests we have at work. Okay, I did win once when I made a Bavarian Tart for a dessert contest, but that was a looooong time ago, and that was the only time. Recipe is here.
I didn't win our Anything with Chocolate Contest or our Pasta Cookoff or our Curry Cookoff or our Sandwich Competition.
It's not just because I'm not so great in the kitchen, but it's also because we got some really good cooks in our office. The competition is fierce. So when I saw this sign posted, I knew that my chances of winning were, once again, slim.
But . . . I had an idea. What if I made something totally different from everybody else's? Hmmmm? What if I made a dessert? Hmmmm? I found this recipe: Ritz Cracker Candy. Best of all, other than the Ritz crackers which coworker Susan provided, I already had all of the other ingredients.
Melt 3/4 cup butter and 3/4 cup light brown sugar in a saucepan.
Break in half 2 sleeves of Ritz cracker and place on a baking sheet.
Bring butter/sugar mixture to a boil and continue cooking for 3 minutes.
Pour over crackers. Bake at 350 degrees for 5 minutes. Turn off oven.
Sprinkle 2 cups milk chocolate chips and let stand in turned-off oven for 3 minutes until melted.
Spread evenly over crackers.
Top with 3/4 cup pecans (I used walnuts) and 1/2 cup white chocolate (I used yogurt chips).
Cool completely (I put the whole pan in the freezer 'cause I have no patience) and break candy into pieces. Store in the refrigerator. Winnahs, right?
Wrong. Leslie won with her Bruschetta Ala Something. Ack. Boo. Hiss. It actually looked better in real life than in this iPhone photo . . . but I no care.

Nice effort though! And it came out looking great! Leslie's creation is kind of genius, putting the pepperoni slice will allow the cracker to stay crisp from the liquid-y bruschetta! I wish I worked in your office...all these cook-offs!

J: I get a sense you're not bitter at all. LOL Your comment about Leslie was so funny, I laughed so much my dogs came to me wondering what I was up to. That was a lotta work not to win, so I feel your pain...but does Leslie feel it? Or is she laughing all the way to the bank with her huge win. hhhmmm. One time one of my friends, whose dad worked as a chef at Canlis, gave me a simple and delish recipe using Ritz crackers as a crust for a quiche. At the pot luck I bought it to, I was surprised to see everyone gobbled it and nevah had leftovers. And I wasn't that good of a cook at that time too. -N

I would have thought the Ritz would have been too sweet for the bruchetta. On the other hand, I'm a sucker for chocolate. Yum! You won as far as I'm concerned.

Yum! Ritz Crackers are the best, imo. Everytime I try other brands - like Costco' Townhouse one - somehow they just don't have it. I have people hunting down the Japan Ritz Cracker with the Oreo type cream filling. Sweet and salty. Told everyone to look for Ritz's "Ecorce" for years. Finally, my son comes home with it. I totally got the name wrong - not "Ecorce" but "Entry" - duh, no wonder nobody could find it for me! Only in Japan, and still hard to find, but it is my favorite. (Marukai has the Ritz one almost like it but still, not the Entry one.)
