Wendell's Squash with Chicken
Wendell bought a new recipe book called Hawaii's Ohana Cookbook which includes recipes gathered by the Star Advertiser and edited by Joleen Oshiro and Betty Shimabukuro. He got it at Costco for $10.99.
Here's Wendell's first dish from the book. It's on page 60 and is actually called "Hyotan with Gingery Garlic Chicken", originally submitted by Cynthia Pratt. It was veeeeery flavorful.
2 lbs. boneless chicken thighs, sliced
2 tbs. ginger, minced
6 cloves garlic, minced
1 tsp. salt
4 pounds long squash, cut into 1-inch cubes
2 tsp. vegetable oil
1/2 c. chicken broth
salt and pepper to taste
green onions and cilantro, chopped for garnish
Combine the chicken, ginger, garlic and salt. Saute in oil in deep pot for about 5 minutes. Add broth. Cover and simmer for another 5 minutes. Layer squash on top of the chicken. Cover and simmer 15 minutes. Stir gently and season with additional salt and pepper. Garnish with green onions and cilantro. Serves 6.
