Wendell found the recipe for this slow cooker pot roast here at allrecipes.com. It was juicy and tender with a little bit of kick to it.
Ingredients
- 1 (4 pound) beef chuck roast
- 1/4 cup butter
- 5 pepperoncini peppers
- 1 (1 ounce) packet ranch dressing mix
- 1 (1 ounce) packet dry au jus mix
Directions
- Place roast in a slow cooker. Form a pocket in the top of roast and place butter, pepperoncini peppers, ranch dressing mix, and au jus mix in the pocket.
- Cook on Low for 8 hours.

You have not heard from me much lately Jalna. I had a health scare in August when it got over 100* at my house in Poway, CA. I got super dehydrated, but I didn't know what was happening to me at first until I studied the symptoms on the net. My left foot swelled up to twice it's size! I learned that our bodies conserve water when we are dehydrated and it goes to our feet. It was so bad I could hardly walk for days.
So when your feet start to swell, be sure to drink more water! That's your first sign. Also very dry mouth, dizziness and many other symptoms you can find on the net.
So I have been studying how much water to drink per day, and nutrition. We all know the 8~8 ounce glasses of water per day. But another theory is, drink one ounce of water per 1/2 you body weight. So I weigh #180, so I should drink 90 ounces of water per day. And I am even drinking a little more for good measure.
I feel overall much better with more water every day. Plus, my low back pain has gone away (too many years of lifting heavy furniture)! We need water to fill our disc's in our back that cushions the spine from our nerves. I've had this low back pain for years. And now with proper water intake my low back pain is gone! It took this bad dehydration event to finally heal my back! Thank God!
So everybody there in Hawaii, be sure to always drink the proper amount of water for your body weight, 'cause so hot ya!

Sorry for your recent health scare, Mark. Thank you for sharing. Really, really good info to know! I always have low back pain. I'll make sure to drink choke water from now on.
From the looks of it, it looks like Wendell seared all sides of the roast before putting it in the slow cooker but it doesn't say to do that in the directions. It has nice color at the end if he didn't sear it. And did he spoon the juices all over meat while it cooked? (Sorry I have two crock pots but I use it to bring food to potlucks, lol.)
You are right on, Susan! I asked Wendell both questions and he said yes to both . . . he did sear the roast before putting it in the cooker and he did spoon the juices over the meat (twice).
My local grocery store has pork shoulder on sale again for only $0.99 cents per pound! YES! It's going to be crock pot kalua pig and cabbage, and white rice again this weekend! Yeah!
She even uses Hawaiian salt in this video. I stab my pork so the salt and the smoke flavor goes down inside.
