Wendell's Irish Soda Bread


This recipe was in last week Monday's Honolulu Star-Advertiser.  It came out so good that Wendell made it a couple more times for his softball team(s).

Heat oven to 375 degrees (350 degrees for loaf pan). 

Whisk together 1 2/3 cups all-purpose flour, 2 tablespoons sugar (5 tablespoons for loaf), 1 teaspoon baking powder, 1/2 teaspoon baking soda and 1/2    teaspoon salt. Stir in 1 cup raisins and 2 teaspoons caraway seeds.

In a separate bowl, whisk 1 large egg, 2/3 cup buttermilk (1 cup for loaf) and 4 tablespoons warm, melted, unsalted butter. Add flour mixture and stir just until the dry ingredients are moistened. The batter will be stiff but sticky. Scrape the batter onto a cookie sheet and shape into a mound about 7 inches across. Use a sharp knife to make a large X on the top.
Bake until golden brown, about 25 to 30 minutes (45 to 50 minutes in a loaf pan). A toothpick inserted in the center should come out clean. Cool before serving.

Just the ingredients alone have me salivating!

Sounds pretty easy too. Do you think it will be good with bananas? We have a lot of ripe ones right now.

Jalna, Do you and your husband ever use a crock pot? I have used one for over 20 years. And just a few weeks ago the porcelain crock finally cracked, on my good old trusty crock pot. UG!

I have already bought and returned two replacement crock pots. Because they all have been over cooking my meals. They are way too hot on high and low. And then warm is non existent! UG!

Do you and your husband ever use a crock pot? Mine was always perfect for my overnight slow cooking of my Pork Butt, or whole chicken fryer noodle and veggie soup.

But the new crock pots over cook everything.

I may have to resort to a good old style crock from a thrift store.

Please share some crock meals if you do. And what brand of crock pot do you use. And how many hours.

I know this is off topic.....but this has been bugging me for weeks now.

Some reviews say the Govt. has made regulations to make crock pots hotter!

But then that would not be a "Slow Cooker"....if it's way too hot!

I am so confuzzelled!

And you know how much I always loved my crock pot!

My third crock pot buy just yesterday is a Hamilton Beach 6 quart oval stainless from Kohl's. Just $19 bucks, and with $10 off coupon just $10.49 with tax! ; )

I sure hope it works! Best buy on a crock I have ever had!

But I am so tired of the too hot over cooking.

My good old trusty one of 20 years never did that. It was a "Crock Pot" brand, 5 quart round.

I never have luck with recipes I find in the paper. Sigh. Wendell needs to teach me.
