King Arthur Brownie Mix

I saw this brownie mix at Ross and was wondering how it would turn out because it was "gluten free", but I thought I'd try it anyway because Wendell likes desserts and I've been lazy to bake lately, and this seemed easy enough.

I followed the instructions for a more cake-like, less fudgey brownie, added chocolate chips and nuts, and it came out good!

It was $4.99 which is not a huge Ross savings since Amazon has it for $5.47.

Dd's Irish Beer Stew

Beer for the tender meat and good flavah!  Must be ono!

IRISH BEER STEW

 

2 #s chuck,  stew cut

½+½ tsp. salt

½ +1/4 tsp. black pepper

1/4 c. flour, as needed

 

1 ½ -2 tsp. vegetable oil, as needed

1 large onion, thinly sliced

2 large garlic cloves, finely chopped

1 tsp. fresh thyme, coarsely chopped

1 tsp. fresh rosemary, coarsely chopped

12 ounces Irish Ale or Stout

½ c. water, as needed

1 medium carrot, stew cut

2 medium Yukon Gold potatoes, stew cut

 

Generously season stew meat with salt and pepper. Dredge in flour.


In a large saucepan over medium high heat brown meat in oil on all sides.  Transfer to a plate; set aside. 


Into saucepan, add additional oil as needed.  Saute onions until pale golden, about 10 minutes. Add garlic, thyme, rosemary and remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring to combine well. Add stout and water, bring to a boil, return beef to saucepan. Add additional water as needed to cover meat. Cover saucepan; lower heat to a simmer. Allow to simmer 1 ½ hours. Add carrot and potatoes. Continue simmering 30 minutes until beef is tender and vegetables are cooked through. 


Serves 2-3.

I'm not into going out to eat lately, but Annie and Sue twisted my arm, and I'm glad they did.  I had a great time.  And the food was awesome.

His Eminence Vairochana Rinpoche

Bhutanese prince His Eminence Ngawang Jigme Jigten Wangchuk is the son of Her Royal Highness Princess Ashi Sonam Dechan Wangchuk and the grandson of Her Majesty Queen Mother Ashi Dorji Wangmo Wangchuk.  

He is also the reincarnation of Lotsawa Vairochana, the 8th century translator chosen by the then Tibetan King Trison Detsen to journey to India to study and receive Dharma transmissions.

The following is a talk that he recently gave in Vietnam.  He is 12 years old.

Annie's Green Papaya Soup

1 Big Bumboocha Green Papaya

4 organic chicken thighs with bone

3 garlic cloves, chopped

Fresh ginger, smash then chop

1 onion, chopped


Peel green papaya 

Take out seeds, chop into small pieces

Debone and cut chicken into cubes 


Season chicken with salt, pepper, onion powder, cumin 


Add oil in soup pot to brown chicken. Add ginger and garlic. Add about 1 cup water. Bring to boil.  Add onions; boil until translucent, then add green papaya. Cook until tender.

Baked Salmon

Like my cousin V says, "So simpo!"  I just marinated the salmon in Yoshida Sauce overnight, and baked the next day at 450 degrees for 20 minutes.  I broiled it a little after, but really no need.

Wendell's Creamy Chicken and Wild Rice Soup

This recipe is from the Allrecipes site.  The soup was a hit, especially with a sandwich!

Ingredients

  • 2 cooked, boneless chicken breast halves, shredded

  • 4 cups chicken broth

  • 2 cups water

  • 1 (4.5 ounce) package quick cooking long grain and wild rice with seasoning packet

  • ¾ cup all-purpose flour

  • ½ teaspoon salt

  • ½ teaspoon ground black pepper

  • ½ cup butter

  • 2 cups heavy cream

Directions

  1. Combine chicken, broth, and water in a large pot over medium heat. Bring to a boil, then stir in rice, reserving the seasoning packet. Cover and remove from heat.

  2. Combine flour, salt, and pepper in a small bowl.

  3. Melt butter in a medium saucepan over medium heat. Stir in contents of seasoning packet until mixture is bubbly. Reduce heat to low, then add flour mixture, a few tablespoons at a time, into the butter mixture, stirring continuously to form a roux. Whisk in cream, a little at a time, until fully incorporated and smooth. Cook until thickened, about 5 minutes.

  4. Stir flour and cream mixture into broth and rice. Cook over medium heat until heated through, 10 to 15 minutes.

Jett and Kai

They came back!  I found out that the boy is a show dog.  His name is Jett.  Back in Japan he was a Junior Champion.  

The girl dog is Ruby.  She's not as shy as Jett.
