BAKED JERK CHICKEN WINGS
1 ½#s chicken wings and drumettes
Marinade:
½ medium onion
3 stalks green onion, chopped
¼ c. soy sauce
2 TB vegetable oil
¼ c. apple cider vinegar
1 TB agave syrup
1 small green jalapeno pepper, halved, deveined
1 ½ tsp. dried thyme
¼ tsp. salt
¼ tsp. allspice
¼ tsp. cinnamon
¼ tsp. ground cloves
In a food processor combine marinade ingredients. Puree until smooth consistency. In a shallow dish lay chicken pieces. Top with half of marinade. Cover; refrigerate at least 6-8 hours. Reserve remaining marinade.
Preheat oven to 425 degrees. Line a baking sheet with aluminum foil; spray with cooking spray. Place chicken onto prepared sheet. Top with any marinade left in bowl. Bake 25 minutes. Brush ½ of reserved marinade onto chicken. Continue baking an additional 15 minutes. Turn chicken over; brush with remaining marinade. Continue baking 10 minutes until drumettes are cooked through.
Serves 2-3.

We have a very popular Jamaican restaurant here but looking at the spices in this recipe, I don’t think I taste a lot of those spices. Must be a watered down version. I would like to try this recipe for the real jerk taste!
