My sister's mother-in-law makes the best, best, best lavosh. She makes all kine varieties including sesame seed, guava-glazed, lilikoi-glazed and nut-crusted lavosh. Here are some photos that my sister took while she watched her mother-in-law in action.

But in the pix there are three sheets and not balls? do you roll out each ball then keeping others? until it fits the pan? what about the butter mix she's whisking on the sheets before baking? thanks so much -N
N, my sister said no punching down. I think she knows the size of each ball so she doesn't need to proportionate it out as instructed. I think it's lilikoi glaze that she's brushing on.
