Colin's Almond Float


Colin and Cy made this almond float using a Hawaiian Electric recipe.  Cy said that it was super easy.  Colin actually didn't want any fruit in his.  Cy opted for just mandarin orange.

Ingredients:

  • 3 envelopes unflavored gelatin
  • 3 1/4 cups water
  • 1 cup evaporated milk
  • 1 1/2 cups milk
  • 1 cup sugar
  • 1 tablespoon almond extract
  • 2 cans (1 lb 4 oz size) lychees, including liquid
  • 2 cans (16 oz size) fruit cocktail, including liquid
  • 2 cans (11 oz size) mandarin oranges, including liquid
  • Maraschino cherries

Directions:

  1. Soften gelatin in 1/2 cup of the water.
  2. Heat the remaining 2 3/4 cups water, evaporated milk, milk, and sugar; stir until sugar dissolves.
  3. Add softened gelatin; mix well.
  4. Cool.
  5. Add almond extract.
  6. Pour into a 13 x 9 x 2-inch pan and chill until firm, about 2 hours.
  7. Cut gelatin into cubes; carefully place in serving dishes.
  8. Add desired fruits with liquid.
  9. Garnish with cherries.

Makes 20 servings.

Dog Park

Both me and Wendell are small-kine injured so we haven't been able to take Kai on proper walks.  I've started taking him to the dog park again.  Kai is bigger now so I'm not as nervous as before, and he totally loves it.

This photo is of us alone at around 6:30 in the morning.  About 4 other dogs did come while we were there so he was happy.

Wendell's Dynamite Kim Chee Shrimp and Lup Cheong

This is a Foodland recipe.  Wendell chose to use aburage pouches instead of mushrooms to stuff.  He made it for his softball team.  It was a hit!

  • 1 pound Crimini or Button mushrooms
  • 3 ounces Lup cheong sausage
  • 1/4 pound Kim Chee Shrimp Poke
  • 1/2 cup Sriracha mayo
  • 1/4 Yellow onion
  • Salt & pepper, to taste

INSTRUCTIONS 

  • Preheat oven to 350°F.
  • Remove stems from mushrooms and bake bottom up for 15 minutes. This will render water content to ensure filling consistency. Gently drain mushrooms, season with salt and pepper, and let cool.
  • Finely dice Lup Cheong and sauté. Let cool.
  • Mince Kim Chee Shrimp Poke and finely dice onions.
  • In a bowl, combine Kim Chee Shrimp, onions, lup cheong and sriracha mayo and mix thoroughly. Add salt and pepper to taste.
  • Fill the mushrooms with filling and bake for another 10 minutes.
  • Broil for 4 minutes and serve.

Yesterday was our last class. We didn't make anything, but went to pick up our remaining pieces and had a potluck.  It was so interesting to see all the different styles.

Butterfly

I got it!  Only thing . . . after waiting for awhile for something to happen, I decided to switch from vertical to horizontal orientation, and when I changed the setup I forgot to plug in my phone and the battery ran out before the butterfly started flapping its wings.  🥴

Cucumber Salad

I followed Ian Fujimoto's YouTube video to make this.  The taste was super ono, BUT I shoulda let the salt miko for longer before rinsing because the dressing got watered down after awhile.  Maybe it's not meant to be left in the 'fridge for a few days.

Ingredients:
- Persian Cucumbers (8-10)
- Salt (a lot)
- Soy Sauce (6tbsp)
- Sesame Oil (2 tbsp)
- Mirin (3 tbsp)
- Sugar (1 tbsp)
- Chili Garlic Sauce (2 tbsp)
- Rice Vinegar (2 tbsp)
- Garlic (2 cloves)
- Sesame Seeds (as much as you like)

Baking Class at Island Baking Studio

Geri took a Japanese Bread/Dessert Baking Class at Island Baking Studio yesterday.  It cost $40 for 3 hours and they made 3 different breads.  She had a great time.

Just Some Photos

Too lazy to blog, so just some photos. 

Kai's favorite giraffe.  no stuffing and no head.  LOL.  see the chewed up stool in the background?  Kai did that when he was younger.

Made a cucumber salad.

Geri had to bring me leaves or these caterpillars wouldn't have made it this far.

Took me 2 hours to carve my name (backwards) for a stamp to use on future pottery pieces.
