Was doing OK with what my daughter calls stinky feet spice... it is tons of raw garlic mixed in with generous amount of balsamic vinegar and squeeze of lemon; works well as a salt substitute but I don't think the high acidity is good for you and of course it does smell like, well, stinky feet. But, REALLY hard to make kim chee and pickled veggies without salt.
