Toaster Oven-Baked Sweet Potato


I usually steam my sweet potatoes, but after reading my cousin V's conversation with Kat (Adventures in Japan) about baking sweet potatoes in a toaster oven, I wanted to give it a try.

I bought two medium-sized potatoes at the swap meet yesterday for $3.25.

After texting V for instructions (twice), I was good to go.

Wash the potatoes and poke some pukas in them so that they "don't blow up". Put them directly on the wire rack of the toaster oven. 

Bake at 350 degrees for 40 minutes and . . . ho da ono they come out!

whew! Glad they came out good. Maybe you can try Kat's style, wrapping in foil, sort of steaming. Then the skin might be edible, if you like the skin.
I love all kinds of sweet potato. There's one that my cousin's wife gave me that I've been trying to find. She calls it the chestnut sweet potato because color, texture and taste is like chestnuts. All she says is her friend gives it to her and she doesn't know what and where. :(

That looks like bread not potatoes. So if I try with Okinawan purple potatoes, do I cook them for a shorter period of time? I like try.

Oh I gotta try. I love sweet potato! MI usually steam it, but kinda blah the taste. The pic looks ono, but doesn’t look like a sweet potato.

j: lol on 'no blow up' - I baked a potato once in the stove and after a while heard a large BAM and the oven shook....opened it and yup potato parts everywhere on the inside. I told a cook I knew and he said he never heard of that. -N

No kidding!? I've never done it that way. I've microwaved it, but now I will definitely have to try the roasting method. Sounds wonderful!

I love my toaster oven. I am always just cooking for me so it's the perfect oven! I never use my huge 220 volt wall oven anymore. This saves on electricity too. I bake, broil and toast every thing in it. It's on the counter next to my crock pot and rice cooker. That's my cooking nook. I can do it all right there.
