I scored the leftovers from our filipino-food lunch this past Saturday and used them to make this fried rice for dinner that night. I chopped up the lechon and fried pork and fried them with some onion. I added rice, scrambled eggs, patis and shoyu. I meant to sprinkle some black pepper too, but I forgot.
I served it with our leftover shrimp sarciado. Was yummmy!!
I love just mixing it up like this with what ever is on hand and be creative! I have not looked at a cook book in over 20 years. Except once when I wanted to make home made pizza.
