Wendell made this on the same night that he made the crown roast. Not sure if pumpkin is considered low-carb or not, but I ate three pieces 'cause was ono. Wendell said that he drizzled and rubbed the pumpkin pieces with some olive oil, sprinkled with seasoned salt and pepper and then baked at 400 degrees for around 1/2 hour.
I put kabocha in some of my dad's dishes that I cook for him but always end up with some leftover. I need to try this instead of forgetting about the leftover to rot in my fridge.
