My Energy Bars


Maybe I should call this an Energy Nugget instead of a Bar. I cut some of the bars into this size for me 'cause sometimes all I want is just one bite.

I got the idea to make energy bars when I saw this trail mix at Sam's Club.  Good idea, right?  It was around $10.

Here are the ingredients that I used. I used Biscoff cookie spread instead of peanut butter and I also sneaked in some chocolate chips.

Heat: 2 cups oats, turn off burner
Add: 3 cups Rice Krispies and 4 cups of stuff (raisins, nuts, seeds, dried fruits, etc.)
Melt: 1/2 block of butter, 1/2 cup peanut butter, 1 10 oz. package of miniature marshmallows. 

Pour melted ingredients into dry. Mix well. Pour into 9 x 13 inch pan lined with wax paper.  Spread out evenly and press down with a wax paper covering. Cut as desired.

(For this batch I used 3 cups of the trail mix, 1/2 cup peanuts and 1/2 cup chocolate chips. Also, bigger-sized marshmallows were on sale at Foodland so I bought those and cut um up with scissors.)

I read a tip online about using a jar to help press down your mix. It works good.

I put a dish towel into a bowl to make this pretty shot.

And then I had to go and clean up the kitchen.

I"m glad you found a recipe so I can steal it! I've been looking for one for a long time but I never knew which one to choose. The one I did try came out crappy...

I kinda combined two recipes, so still tweaking it. Feel like I wanna put at least 3 cups of Rice Krispies. I bringing some bite-sized ones for you today.

J: Went to Keeamoku Mkt and wisely parked on the street. The line to get in the driveway was out onto the street blocking street parking stalls Lukcily down the way by that ramen place had stalls I could just drive into. Inside it was pretty empty. Anyway did not find the peaches. Their kuri is now .99-c. The chestnut is still .79-c, apple bananas, won bok and russet potato .89 all super cheap. The chips I bought for .25-c is now .45-c. I wonder how they figure out the pricing.

I even drove to Ninjiya University to buy their char siu cuz Ala Moana was sold out. OMG the parking there is horrid too but luckily I have a handicap sticker so I got one out of the sun. I actually scored the last char siu too. Ppl must love that stuff. Their dorayaki is still on sale for $2.99 pretty cheap. Parking attendant felt so sorry for me w/ my parking issues he helped me get out while another dude watched me amused.

Ahh wonderful adventures today, another successful town day. -N

J: sorry to yabber so much on your blog. Forgot to give you info. At Marukai in the Japanese coffee section (by the teas) are some instant liquid coffee on sale for $.99 for about 8-10 pods. I think it's either Nescafe or Maxwell - located on the very top shelf. The directions on the shelf was in English but the pkg. is in Nihongo. Mom told me, add the pod into 8 oz of hot water along w/ milk and sugar if desired. It's Dark Espresso and she said it's so delicious and fast. The coffee appears to be a concentrate in a pod like Keurig pods.

She said the pkg said better for cold coffee (pkg showed iced coffee) but she prefers hot. There was 2 types one w/o sugar but there was only one type. Didn't have much left, I'm taller than most so was EZ for me but had shorter local ladies by me and they were straining to look up to see. -N

Kat, I made more today . . . without chocolate this time!

N, I wonder if the peaches sold out! I'm gonna eat my last one tonight. Am looking forward. I also bought more chestnuts. I love to hear your parking stories 'cause I suck at it too. The new Marukai ad week starts tomorrow so I'll probably be going there soon. I hope I remember to look for your liquid coffee. That sounds interesting. I don't think I ever saw it, probably because I'm short. LOL! And no worry about "yabbering". I enjoy your yabber.

I had two left, wanted to be nice and gave one to the hubby. I can't wait to make some. The possibilities are endless! I agree with Mark and Akemi...definitely a party in your mouth and you can make $$$!!!
