Michele's Shoyu Pork


The day before yesterday coworker Michele announced that she was gonna bring some shoyu pork for us to eat the next day.  CQ volunteered to make Okinawan Sweet Potato Salad.  She also brought some Forbidden Rice mixed with white rice.  Lorna brought some ono rolls from Walmart Bakery.

Everything was really, really yummy, especially the shoyu pork.  CQ even made a couple of sandwich rolls.  Her salad was really ono too.  If CQ remembers to give me her "some of this and some of that" recipe, I'll post it for you.

Here's Michele's recipe:


1 piece (5-6 pounds) boneless pork butt or if on sale, the one with bone okay too.
2 potatoes, cut into small chunks
Sauce:
1 cup shoyu (Aloha)
2/3 cup sugar
1 piece (thumb size) fresh ginger, crushed
2 cloves garlic, crushed
1/2 cup water
1/8 teaspoon sesame oil
1 tablespoon scotch whiskey or crown royal


Brown pork evenly on all sides in a large, heavy pot.
Pour out excess oil.
Combine all ingredient for the SAUCE and pour over pork.
Bring to a boil and reduce heat to low.
Cover and simmer for 2 - 2.5 hours, turning pork over on all side during cooking.

 
My father-in-law's way ----- Brown pork on all sides and put into pressure cooker with water half way and cook for one hour-ish. Check if soft enough, add SAUCE and cook for 30 minutes. Take pork out and add potatoes in sauce and cook till tender.

Any Okinawan cookbooks you can recommend? Didn't see any at the Okinawan Festival? I thought maybe they would have something like 1001 ways to cook goya....I usually eat bitter melon black bean stir fried or steamed with pork hash. Looking for some variety.

Easy recipe...and looks so yum!!the Okinawan sweet potato salad sounds good too. Looks like you all had a feast!!
