Wendell's Oxtail Stew


Awhile back Wendell made this oxtail stew. It was really, really good. The recipe is from What Hawaii Likes to Eat - Hana Hou!


4 -5 pounds oxtail
1 cup flour
1/2 cup salad oil
2 medium onions, wedged
1 clove chopped garlic
5 cups water
2 bay leaves
1 1/2 tsp salt
1/4 tsp pepper
2 cans (8 oz each) tomato sauce
1 can (10 3/4 oz) condensed tomato soup
4 small carrots, cut into 1-inch pieces
4 small potatoes, quartered
1 cup sliced celery
flour-water mixture for thickening

Dredge oxtails in flour; brown lightly in large pot on all sides in hot oil. Add onions and garlic; brown lightly. Add water and bay leaves; bring to boil; cover and simmer 1 1/2 to 2 hours or until oxtails are tender. Add remaining ingredients; simmer additional 30 minutes or until vegetables are done. Thicken with flour-water paste, if desired.

I love oxtail stew. I seldom make it because Gerry doesn't like the oxtails. He'll eat it but he would rather not. This was a staple in our house growing up!! :)

I kinda agree with Gerry about the tails. I'll take whatever meat happens to fall free, but I don't really like the bone on my plate.

Rick, actually it was right here in my bedroom where the window light is the best. Haha!
