Landon's Onolicious Portuguese Bean Soup


Landon made this Portuguese Bean Soup a couple of weeks ago. It was really, really good. You'll need a pretty big pot for the following recipe.

1 1/2 pounds smoked pork shoulder, 1/2 inch dice
1 1/2 Portuguese sausage, 1/2 inch dice

3 cloves garlic, minced
3 bay leaves
1 tsp. thyme
seasoned salt

1 onion, 1/2 inch dice
1 bunch watercress
3 stalks, chopped celery
1/2 head cabbage
3 medium carrots
3 large potatoes, 1 inch dice

2 cans kidney beans
1 large can stewed tomatoes
1 large can tomato sauce
1 small can tomato sauce
3 cans beef broth
2 cans chicken broth

1/2 pound pasta
Sautee pork shoulder with onions until browned. Add bay leaves, thyme and garlic. Sautee a little longer.

Add beef and chicken broth, stewed tomatoes, and tomato sauce. Simmer for 45 minutes.

Add portuguese sausage, kidney beans, carrots, celery, and pasta. Cook for about 10 minutes, then add potatoes. Simmer for another 10 minutes.

Thicken with flour/water. Add cabbage and watercress.

Add seasoned salt or chicken boullion cube to taste if more flavor needed.

Damn...I still gotta give you my recipe. I'll take a stab at it this weekend...I think my dad wrote it down..but I like test em first. :) PBS on Monday!

Oh my goodness! May I come eat at your house?? This looks so ONO!! I made portuguese bean soup once, followed a recipe that I found in a cookbook put out by the Portuguese Society in Hawaii. Bought it at the Hawaii Plantation in Waipahu. It made a huge pot, however, we didn't like it. I froze some of it and ended up throwing it away. It certainly wasn't like my grandma's. There is a lot of ingredients in this recipe yet it is not difficult at all. Does it freeze well? If so, I might attempt to make some.

Betty, I think it should freeze well, but I not too sure . . . ours went in a couple of days.
