Pecan Tarts

I used to make this a lot back in the days when I had more energy. It's fairly easy to make . . . even for me.
For the dough, mix together 1 c. butter or margarine, 6 oz. cream cheese and 2 cups sifted flour.
Press into minature muffin tins. The recipe makes 3 1/2 dozen but I only have 3 muffin tins which makes 3 dozen, so I ended wasting some of the filling.

For the filling mix together 1 1/2 c. brown sugar, 2 tsp. melted butter, 1 c. coarsely chopped pecans, 2 eggs, slightly beaten and 1 tsp. vanilla.
The recipe says to put filling 1/2 to 3/4 way up . . . I just fill it up.
Bake for 15 minutes at 350 degrees, reduce heat to 250 degrees for another 10 minutes.
If you like, sprinkle with powdered sugar when cool.

Erick, I'll call you when I make the next batch.

Thanks Betty. It's only 'cause I need blog material that I'm baking. Pretty soon I'm gonna run out of stuff that I know how to make.
